To make a French salad recipe, heat the goose gizzards in a bain marie or in a frying pan, then cut into small pieces and add it into a crunchy salad. In a frying pan, add a spoon of fat, croutons and some pin nuts ou Perigord nuts for the crunchy. Then add it to your salad with sliceds of duck smoked breast meat and season with nuts mustard, vinegar and a little walnut oil.
You may keep the goose fat in your fridge to use it to roaste potatoes.
